Step preview

  1. Add butter and onion to a clean ceramic baking dish and cover
  2. Microwave until soft - 4 min, 1000 W (High)
  3. Add carrot to the ceramic baking dish and cover
  4. Microwave - 8 min, 1000 W (High)
  5. Add vegetable stock and orange zest to the ceramic baking dish and cover
  6. Microwave - 5 min, 1000 W (High)
  7. Microwave - 15 min, 440 W (Med-Low)
  8. Place mixture of stock and softened vegetables in a blender and puree until smooth
  9. Add orange juice, crème fraîche, salt & pepper and orange juice to a clean medium bowl
  10. Return pureed mixture to bowl
  11. Microwave - 3 min, 600 W (Medium)
  12. Add fresh chives to the medium bowl
