Easy Chicken Fajitas made in the slow cooker! Still all the delicious flavors of traditional fajitas without all the extra hassle! Just dump everything into the crockpot and let it simmer to tender well seasoned perfection.

Step preview

  1. Add diced tomatoes with green chiles to a clean slow cooker bowl
  2. Spread evenly
  3. Add yellow onion, red bell pepper, orange bell pepper, green bell pepper, garlic clove and chicken breast to the slow cooker bowl
  4. Whisk chili powder, ground cumin, paprika, ground coriander, salt and black pepper into a clean medium bowl
  5. Sprinkle half of the seasoning over chicken breasts, then flip chicken and sprinkle in remainder.
  6. Add diced tomatoes with green chiles, red bell pepper, orange bell pepper, green bell pepper and yellow onion to the slow cooker bowl
  7. Cover and cook on High heat for 3-4 hours, or Low heat for 6-8 hours
  8. Remove chicken, and cut in to strips or shred
  9. Ladle out 1 cup of the broth from the slow cooker and discard
  10. Whisk lime juice and honey into a clean small bowl
  11. Pour in mixture and gently toss
