Step preview

  1. To a mixing bowl add baking powder, baking soda, salt and flour
  2. Mix together and set aside
  3. In a separate mixing bowl add vegan butter, dark brown sugar and white sugar
  4. Using a spoon mix the sugars and butter together for 1-2 mins until the mixture becomes paler and smoother
  5. Add the almond milk and mix to combine
  6. Fold the flour mixture into the butter mixture until all the flour is combined
  7. Add the chocolate and hazelnuts to the dough and using your clean hands fold them in until combined
  8. Line a plate with parchment paper and roll dough into dough balls, Roughly 55-60g per dough ball
  9. Put the cookie dough balls into the fridge and let them cool for 2 hours
  10. Line the enamel tray with some parchment paper and add 2-4 cookie dough balls to the tray
  11. Broil on low (Broil 2) for 17 mins
  12. Carefully remove the enamel tray and let the cookies cool for 20 mins on the tray. This part is important
  13. Repeat with remaining dough balls and eat once cooled or store in an airtight container for up to 5 days
