Hazelnut chocolate spread

Dark chocolate

Raspberries

160 g
Coconut oil

4 tablespoons
Golden caster sugar

5 tablespoons
Vanilla extract

½ teaspoon
Egg

All purpose flour

Baking soda

Cocoa powder

Mini muffin pan - 12-hole
Large mixing bowl
Large resealable plastic bag
Baking sheet - 18 x 13"

Step preview

Pre-heat oven - 180°C
Add hazelnut chocolate spread to a clean large resealable plastic bag
Add raspberries to a clean baking sheet
Transfer chocolate mixture to fruit
Chill in freezer and continue
Add coconut oil, golden caster sugar and vanilla extract to a clean large mixing bowl
Mix until combined
Add egg and buttermilk to the batter
Mix until combined
Add dark chocolate to the batter gradually
Add all purpose flour, baking soda and cocoa powder to the batter
Mix gently until just combined
Grease 2 clean mini muffin pans
Transfer batter to 2 mini muffin pans
Transfer fruit to 2 mini muffin pans
Bake - 10 min, 180°C
Let cool - approx 5 min
Transfer onto cooling rack until completely cool
