Carnitas are the Mexican version of pulled pork, traditionally made with pork shoulder. The seasoned pork is slow cooked in your Instant Pot Pro Plus until tender and juicy, ready to be filled in a warm corn tortilla. Top with all your favorite toppings such as sour cream, guacamole and coriander for best results!

Step preview

  1. Add the spices, salt and sugar to a small bowl and set aside
  2. Pat the pork shoulder dry and season both sides with salt and pepper
  3. Add olive oil to the inner pot
  4. Pre-heat inner pot on Sauté
  5. When the Instant Pot Pro Plus has finished pre-heating add the pork shoulder
  6. Brown the pork on each side for 4 mins
  7. Carefully remove the browned pork and place on a cutting board
  8. Add the juice of 2 limes to the inner pot to deglaze
  9. Add in the onion, garlic and stock cube, mix to break up the cube
  10. Add all the spices and sugar from the small bowl and mix for 30 seconds
  11. Add 600 ml of water to the inner pot and mix to combine
  12. Add the pork back in
  13. Turn over the pork to get a light coating of spices all over the pork
  14. Secure the lid onto the Instant Pot Pro Plus
  15. Pressure cook for 45 mins on Max, then allow for Natural Release 10 min, then Quick Release the remaining pressure
  16. While pork is cooking prep your taco toppings
  17. To make the pickled onions, add the sliced onions, salt and lime juice to a jar or tupperware box
  18. Add a lid on top and shake to coat the onion slices
  19. Leave the onions on the counter to pickle while you prep your mango salsa
  20. Add the mango to a medium bowl, with some lime juice and pinch of chipotle
  21. Mix to combine and set aside for when you are ready to serve
  22. Add the avocado to a bowl with the juice of 1 lime and season with salt
  23. Cover the avocado and set aside until ready to serve
  24. Place the sour cream, jalapenos and torn cilantro in three separate dishes
  25. Once the pressure has fully released carefully open the Instant Pot Pro Plus
  26. Remove the pork from the cooking liquid and place in a large bowl
  27. Reduce the cooking liquid in the inner pot on Sauté until the sauce is reduced by half
  28. Shred the pork with two forks
  29. When the sauce has reduced, heat a frying pan on high heat with some oil
  30. Add the shredded pork and 1/2 a cup of reduced liquid to the frying pan
  31. Leave the pork frying on high for 2-4 mins without moving the meat, until one side of the pork is browned
  32. Place the pork in a serving bowl in the middle of the table along with all the taco toppings and the warm tortillas
  33. Fill a warm tortilla with some pork and all the toppings eat, enjoy and repeat
