Step preview

  1. Add the onions, oil and salt to a small microwave-safe dish
  2. Microwave on High for 2 minutes
  3. Add the spices and garlic to the softened onions and mix to combine
  4. Add the tomatoes and season with salt and pepper
  5. Mix well to combine
  6. Microwave on High for 2 minutes
  7. Using a spoon make a space in the hot tomato sauce and crack in one egg and then repeat with the other egg
  8. Using a sharp knife poke the yolk of the egg once, and then crumble the feta over the dish
  9. Place the dish onto the wire rack and cook on Combo 1 for 4 minutes
  10. Carefully remove the dish and add the greek yogurt and cilantro
  11. Serve hot with toasted bread
