Step preview
- Pre-heat oven - 175°C
- Line a clean muffin pan
- Add egg, hot coffee, irish whiskey, buttermilk and sunflower oil to a clean large mixing bowl
- Mix then set aside
- Add all purpose flour, cocoa powder, baking soda, baking powder, granulated sugar and salt to a clean medium bowl
- Whisk briefly until blended
- Transfer dry ingredients to batter
- Mix until combined
- Transfer batter to muffin pan
- Bake until skewer tests clean - 15 min
- Let cool completely
- Add unsalted butter to a clean stand mixer bowl
- Cream until light and fluffy
- Add powdered sugar, vanilla extract and irish cream liqueur to the stand mixer bowl
- Mix until creamy
- Frost generously
