This classic creamy pasta dish uses porcini mushrooms which add an earthy, nutty flavor that works really well with salty prosciutto and Parmesan. Keep a little of the starchy pasta water to thin out the sauce if required.

Step preview

  1. Cook fettuccine pasta until al dente ~ 8min
  2. In the second pot heat olive oil
  3. Add garlic clove and porcini mushroom
  4. Stir frequently - approx 4 min
  5. Add prosciutto, whipping cream, fresh parsley and salt & pepper
  6. Boil then reduce heat
  7. Simmer - approx 1 min
  8. Transfer content of saucepan to sauce
  9. Drain pasta and mix with sauce
  10. Sprinkle with parmesan cheese
  11. Serve immediately
