This recipe is quick and easy but impressive. The sauce is spectacularly good. Lime cuts through the rich duck perfectly and honey adds sweetness. If you don't have the arrowroot powder, not to worry, you can omit that step, or use another thickener. Serve the duck with steamed vegetables and drizzle the sauce on top.

Step preview

  1. Pre-heat oven - 200°C
  2. Heat a clean frying pan over medium-high heat
  3. Score duck breast and season with salt and pepper
  4. Fry firstly on the skin side then turn around for about 3 min each side
  5. Move duck breast to the roasting dish and brush with with honey
  6. Roast until just cooked - 5 min, 200°C
  7. Let rest for 3 min
  8. Slice duck diagonally and cover with foil
  9. Add white wine, lime, chicken stock, ginger and honey to the frying pan
  10. Simmer - approx 5 min
  11. Mix arrowroot powder and water in a clean small bowl
  12. Transfer arrowroot mixture to the pan and stir continuously
  13. Cook until thickened
  14. Serve the duck with steamed vegetables and drizzle the sauce on top
