Ditch the packet ramen and make your own at home. This is a simple, comforting take on a Japanese favourite. The broth is beautifully flavoured and ready in minutes. Make sure you cook the salmon until the skin is crispy. It adds wonderful texture.

Step preview

  1. Heat peanut oil in the frying pan over medium heat
  2. Add salmon and cook for approx 5 minutes
  3. Turn and cook for one more minute
  4. Add chicken stock, lime juice, fish sauce, soy sauce and ginger
  5. Bring to boil
  6. Simmer for approx 4 min
  7. Add fresh chili and bok choy
  8. Simmer until tender - approx 5 min, medium heat
  9. Add water and ramen noodles to a clean large saucepan
  10. Cook until tender - approx 3 min
  11. Drain
  12. Transfer noodles to 2 medium bowls
  13. Ladle over the hot broth and top each bowl with a salmon fillet
  14. Garnish with cilantro
  15. Serve immediately
