Step preview

  1. Pre-heat oven - 199°C
  2. Add garlic clove, lemongrass stalk, ginger, cilantro, fresh chili and salt to a clean food processor bowl
  3. Blend until thickened
  4. Add ground lamb and blend until completely mixed
  5. Divide into 4 pieces, roll each into a ball and flatten into a burger shape
  6. Sprinkle a clean medium roasting dish with olive oil and add the burgers
  7. Bake until just cooked - 25 min, 199°C
  8. Peel the cucumber, scoop out the seeds with a teaspoon and discard
  9. Cut into strips
  10. Slice scallion into strips
  11. Roughly shred the pak choi, keeping the white parts separate from the green
  12. Using a spoon, drain off all but about 2 tablespoons fat from roasting pan
  13. Arrange all the veg except the green parts of the pak choi in the roasting dish
  14. Bake medium roasting dish - 5 min, 199°C
  15. Add muscovado sugar, lime zest, lime juice and fish sauce to a clean small bowl and mix until combined
  16. Scatter peanuts over the burgers
  17. Transfer half of dressing to meat and toss with slotted spoon
  18. Serve
