Step preview

  1. Add garlic clove, dried chilies, sea salt, ground turmeric, lemongrass stalk and shrimp paste to a clean food processor bowl
  2. Blend until smooth
  3. Transfer the paste to the pot and stir in fish sauce
  4. Add caster sugar, lemongrass stalk and water and mix until combined
  5. Bring to the boil
  6. Simmer gently - 8 min, medium-low heat
  7. Add lemon juice, tamarind paste and water to a clean small bowl
  8. Mix with tablespoon
  9. Add mixed tamarind paste to the saucepan
  10. Add pineapple and stir until completely mixed
  11. Add salmon steak and simmer gently until cooked through - 10 min, low heat
  12. Spoon into warm bowls and serve with steamed rice
