- 50 g

- Red onion
- 1

- Tomato purée
- 250 g

- Pesto
- 3 tablespoons

- Saffron threads

- Vegetable stock
- 750 ml

- Water
- as needed

- Frozen peas
- 50 g

- Garlic clove
- 3

- Fresh parsley
- 4 tablespoons

Step preview
- Add pork loin, paprika and salt & pepper to a clean medium bowl
- Toss until combined
- Add olive oil to a clean frying pan
- Heat in frying pan
- Add chorizo and red onion to the frying pan
- Transfer pork to frying pan
- Sear in frying pan until browned
- Add tomato purée, pesto, saffron threads and vegetable stock to the frying pan
- Heat until just boiling
- Reduce heat
- Cook gently in frying pan until tender - 15 min
- Sprinkle with linguine
- Stir until well combined
- Cook in frying pan until tender
- Add water and frozen peas to the frying pan
- Cook in frying pan - approx 3 min
- Stir in garlic clove, fresh parsley, lemon and olive oil to the frying pan
- Season to taste
- Serve
