Give this family favorite a healthy upgrade with the addition of blended eggplant in the meat sauce. You’ll still get all the creamy comfort from the cheese sauce, with just some extra nutrients as a bonus.

Step preview

  1. Pre-heat oven - 180°C
  2. Add eggplant, red onion, garlic clove, vegetable stock and red wine to a clean large saucepan and cover
  3. Simmer - 5 min, low heat
  4. Uncover and cook until tender - 5 min, low heat
  5. Remove from the heat, allow to cool slightly
  6. Purée with stick blender
  7. Fry ground beef in a clean frying pan until browned
  8. Transfer vegetables to frying pan
  9. Add canned chopped tomatoes
  10. Simmer gently in frying pan until thickened - 10 min
  11. Add egg white and ricotta cheese to a clean small bowl
  12. Beat with a fork
  13. Add milk and parmesan cheese to the cheese mixture and beat again
  14. Season with black pepper to taste
  15. Alternate layers of meat sauce, lasagne and cheese sauce in an ovenproof dish
  16. Repeat layering until all of the mixtures have filled the dish
  17. Sprinkle with parmesan cheese
  18. Bake until golden brown - 35 min, 180°C
  19. Serve
