This sweet Horchata is a refreshing dairy-free milky drink with a base of rice and cashew nuts. It's a traditional Mexican beverage with a hint of cinnamon that makes a great stand-in for a dairy-free smoothie or milkshake. Just soak rice and nuts overnight, then blend up in the morning. Serve over ice with a fruity garnish. Add more or less water, sugar, ice to taste. This is meant to be sweet, but refreshing. If you are really precious about the grainy bits, you can strain it through a fine sieve or piece of muslin….but I personally had no problem. The longer you blend, the smoother the result….now to try it frozen and churned into ice cream. There’s a thought!
