Jocon de pollo is a chicken and tomatillo stew. It is a classic Guatemalan dish, heavily influenced by Mayan culture in Guatemala. It is a fusion of ingredients the Maya have been enjoying for centuries. Traditionally, jocon de pollo is eaten with rice alongside it, but depending on the thickness and consistency of your chicken and sauce, it can very well be served on its own as a sort of stew too. Jocon de pollo is a fun, colorful and super flavorful dish to try, especially since it’s incredibly easy to make.

Step preview

  1. Add sesame seeds to a clean large saucepan
  2. Toast then set aside - approx 2 min, medium heat
  3. Replace on drop
  4. Add olive oil and onion to the large saucepan
  5. Cook until softened and continue - approx 2 min
  6. Add garlic clove, yellow capsicum, jalapeño pepper, coriander, green onion and tomatillo to a clean large mixing bowl
  7. Mix briefly until combined
  8. Transfer vegetables to large saucepan
  9. Cook until softened - 4 min
  10. Add chicken stock to a clean glass measuring cup
  11. Transfer liquid to large saucepan
  12. Simmer while stirring occasionally - 5 min
  13. Transfer content of large saucepan to blender jug carefully
  14. Blend until smooth then set aside
  15. Add olive oil to the large saucepan
  16. Heat - medium heat
  17. Add chicken thigh to a clean medium bowl
  18. Season with salt & pepper generously
  19. Transfer chicken to large saucepan
  20. Sear each side - approx 3 min
  21. Transfer sauce to large saucepan and cover
  22. Simmer while stirring occasionally - 15 min
  23. Sprinkle with lime
  24. Garnish with green onion
  25. Serve
