Step preview
- Line 2 clean baking sheets with parchment paper
- Add all purpose flour, ground ginger, ground cinnamon and ground cloves to a clean medium bowl
- Add cocoa powder, baking soda and nutmeg to the dry ingredients
- Whisk briefly until combined then set aside
- Add unsalted butter, ginger and dark brown sugar to a clean large mixing bowl
- Cream together - medium speed
- Add molasses to the sugar mixture
- Mix until combined - medium speed
- Mix a clean large mixing bowl well - medium speed
- Add chocolate chips to the sugar mixture
- Mix large mixing bowl until combined - low speed
- Chill in fridge - 1 hr
- Pre-heat oven - 160°C
- Scoop baking sheets
- Sprinkle with granulated sugar
- Bake - 10 min, 160°C
- Transfer onto cooling rack
