Step preview

  1. Add fine bulgur to a clean medium bowl
  2. Soak with water - 30 min
  3. Add cucumber, red onion and mint leaves to a clean large mixing bowl
  4. Stir
  5. Add tomato to the large mixing bowl
  6. Stir
  7. Let rest
  8. Add fresh parsley to the large mixing bowl
  9. Transfer content of medium bowl to large mixing bowl
  10. Stir thoroughly
  11. Add extra virgin olive oil and lemon juice to the large mixing bowl
  12. Stir well
  13. Add allspice, paprika, ground sumac, sea salt and black pepper to the large mixing bowl
  14. Stir
  15. Garnish with spring onion
  16. Serve
