Step preview

  1. Pre-heat oven - 160°C
  2. Combine banana, egg and rapeseed oil with a clean large mixing bowl
  3. Add all purpose flour, sugar, vanilla instant pudding mix, baking soda and salt to a clean large mixing bowl
  4. Mix until combined
  5. Transfer dry ingredients to wet ingredients
  6. Fold unsweetened shredded coconut and dark chocolate chips into the wet ingredients
  7. Grease and flour a clean bundt pan
  8. Transfer mixture to bundt pan
  9. Bake - 1 hr, 160°C
  10. Let cool slightly onto cooling rack
  11. Flip gently
  12. Serve
