If you are looking for a festive something to make, this dessert is it! The almond butter layer in this recipe is dense. To top these bars you could really use any fruit. Banana slices would be a fun option. Or, perhaps, mango and kiwi for a more tropical look.

Step preview

  1. Pre-heat oven - 175°C
  2. Add coconut oil, unsalted butter and brown sugar to a clean stand mixer bowl
  3. Cream together - medium speed
  4. Add egg and almond butter to the batter
  5. Mix until smooth - medium speed
  6. Add vanilla extract, all purpose flour, whole wheat flour, baking powder, ground cinnamon and salt to the batter
  7. Mix until dough forms - medium-low speed
  8. Grease a clean baking dish
  9. Press batter into baking dish
  10. Bake and let cool - 24 min, 175°C
  11. Add cream cheese, greek yogurt, vanilla extract, unsalted butter and dark brown sugar to a clean stand mixer bowl
  12. Mix - medium speed
  13. Transfer baking dish
  14. Sprinkle with blueberries and strawberries
