Step preview

  1. Add pulled pork to the varoma dish
  2. Pre-steam for 20 min/varoma/speed 4
  3. Add garlic clove and ginger to the TM5 bowl
  4. Chop 4 sec/speed 6
  5. Add all remaining marinade ingredients, except the pork loin, into the Thermomix bowl
  6. Combine 10 sec/speed 7
  7. Cover the pork loin and marinate for at least 1 hour
  8. Add a drizzle of EVOO to a pan
  9. Transfer marinated pork to the pan
  10. Cook marinated loin over a high heat until browned
  11. Set aside and rest for 10 minutes, before cutting into thick slices
  12. Add water to the Thermomix bowl and insert steaming basket
  13. Weigh in the red rice and sprinkle with salt
  14. Cook 30 min/100°c/speed 4 or until cooked
  15. Drain and tip rice into a separate bowl
  16. While still hot, stir through coconut cream, set aside
  17. To assemble, fill your bowls with the coconut rice, sliced onions, bell peppers, pineapple, avocado, beans and the pork plus a generous drizzle of paprika aioli
  18. Place tortilla triangles in the bowl and garnish with lime cheeks, coriander and chili
  19. Serve warm or cold
