  1. In a bowl, combine the sugar and oil
  2. Blend in egg, vanilla extract and buttermilk into the large mixing bowl
  3. Combine flour, salt, cinnamon and baking soda
  4. Add to the moist ingredients
  5. Stir in rhubarb and nuts
  6. Transfer to 2 well-greased 8x4-in loaf pans
  7. Pre-heat oven - 180°C
  8. Bake until a toothpick inserted in the center comes out clean, about 45 minutes
  9. Cool for 10 minutes before removing from pans to wire racks
