Where keshi yena gets much of its taste from is in the Caribbean-inspired spiced filling. Normally, you might have a filling that features some meats or shredded chicken (though in ours, you’ll see we went vegetarian), but really anything you have in the kitchen can work. That type of all-encompassing versatility is one of the real positives of this cheese casserole dish.

Step preview

  1. Heat a clean saucepan
  2. Add olive oil to the saucepan
  3. Heat - medium heat
  4. Add onion, garlic clove, green capsicum and fresh chili to the saucepan
  5. Cook until softened - approx 3 min
  6. Add fresh parsley, capers and raisins to the vegetables
  7. Stir well
  8. Mix in tomato and tomato paste to the vegetables
  9. Mix well
  10. Cook - approx 2 min
  11. Add soy sauce and ketchup to the vegetables
  12. Mix in until well combined
  13. Cook and turn off heat - approx 3 min
  14. Let cool
  15. Transfer vegetables to medium bowl
  16. Add egg to the filling
  17. Mix in
  18. Pre-heat oven - 175°C
  19. Prepare 6 clean small glass bowls
  20. Grease
  21. Line with old gouda cheese thoroughly
  22. Transfer filling to 6 cheese mixture
  23. Cover carefully
  24. Bake until golden brown - approx 45 min, 175°C
  25. Let cool onto cooling rack
  26. Transfer cheese mixture to serving plate
  27. Serve
  28. Serve with rustic french bread
