Eggs are fantastic for any meal, even dinner. Frittatas are a great option for lunch or dinner. Especially if you are making it for a family. Normally eggs can be very fussy when you are making more than one serving. Everyone wants to eat at the same time, but the eggs aren’t done at the same time. A frittata solves this by cooking all of the eggs at the same time. Frittatas are also a great option for using up leftover meats and vegetables. Simply replace the bacon and mushrooms in this recipe with sliced beef, chicken or pork. It can also be made without meat. Just bulk up the vegetables. This recipe does not contain added salt because of the bacon. If you are using low sodium bacon, add 1/4 tsp of salt to the egg mixture, or add salt to taste when serving.

Step preview

  1. Pre-heat oven - 220°C
  2. Add egg to a clean large mixing bowl
  3. Beat thoroughly until well blended
  4. Add milk to the eggs and mix
  5. Add dried basil, dried oregano and dried thyme to the eggs
  6. Mix until well combined
  7. Heat a clean frying pan - medium heat
  8. Add garlic clove, button mushroom, tomato and bacon to the frying pan
  9. Transfer
  10. Cook until set - medium heat
  11. Add cheddar cheese to the eggs
  12. Bake until melted - 15 min, 220°C
  13. Slice
