Warm Tuna Pasta salad, made with chickpea pasta is one of my favourite go to lunches or dinners. Eat it warm or cold both equally delicious

Step preview

  1. In a microwave safe bowl add chickpea pasta, 1 block of frozen spinach and cover with boiling water
  2. Place bowl in the microwave and cook pasta
  3. While pasta is cooking, in a mixing bowl add diced cherry tomatoes, drained tuna, crushed garlic, lemon juice, chilli flakes, olive oil, salt and pepper
  4. When pasta is cooked, drain pasta and spinach and add warm pasta to the mixing bowl
  5. Mix pasta and spinach in well with the ingredients in the mixing bowl and enjoy straight away or cold for tomorrows lunch
