Step preview

  1. Pat the chicken with paper towels to dry
  2. Sprinkle the chicken breasts with kosher salt, pepper, and a seasoning blend (e.g., Cajun or Creole, taco seasoning, Za'atar, herbes de Provence, etc)
  3. Place the trivet in the Instant Pot
  4. Add the chicken stock
  5. Close and lock the lid and turn the steam release handle to Sealing
  6. Select pressure cook (or manual), high pressure, and set the time for 10 minutes
  7. When the time is up, allow the pressure to release naturally for 10 minutes
  8. Then carefully turn the valve to the venting position to release the remaining pressure
  9. Meanwhile, preheat the broiler
  10. Line a baking pan with foil
  11. Place the cooked chicken on the prepared baking pan, skin side up
  12. Broil the chicken breasts for 4 to 6 minutes, or until the skin is browned
