While most people gather around a wonderful roasted turkey over the holidays, our family does not. We created a tradition of having roast chicken instead. Being a military family means that we spend many holidays far away from family. The fact that we are a family of three means that a turkey would be a bit much. So, we opt for roast chicken. It is the ultimate comfort food for us and it always reminds us that "home" can be wherever we are at the moment. I am happy to submit this recipe for Drop's Holiday Recipe Swap.

Step preview

  1. Pre-heat oven - 190°C
  2. Add water, onion, button mushroom and balsamic vinegar to a clean medium roasting dish
  3. Add whole chicken to a clean plate
  4. Insert lemon and garlic the plate
  5. Transfer content of plate to medium roasting dish
  6. Add olive oil, salt, black pepper and poultry seasoning to the medium roasting dish
  7. Roast - approx 40 min, 190°C
  8. Remove carefully
  9. Remove carefully with slotted spoon
  10. Heat until boiling - medium heat
  11. Add poultry seasoning, salt, black pepper and balsamic vinegar to the medium roasting dish
  12. Add cornstarch and water to a clean small bowl
  13. Mix
  14. Transfer content of small bowl to medium roasting dish
  15. Combine
  16. Serve
