Step preview

  1. Pre-heat oven - 175°C
  2. Add icing sugar, butter, lemon and cream cheese to a clean large mixing bowl
  3. Blend until smooth - medium speed
  4. Refrigerate - 20 min
  5. Add pastry flour, caster sugar, baking powder, ground cinnamon, vanilla extract, vegetable oil and egg to a clean large mixing bowl
  6. Add carrot to the large mixing bowl
  7. Transfer batter to loaf pan
  8. Bake - 50 min, 172°C
  9. Let rest - 10 min
  10. Turn out
  11. Frost
