Step preview

  1. Place carrot, parsnip and celeriac into mixing bowl
  2. Chop with MC on - 5 sec/speed 5
  3. Transfer into Varoma dish and set aside
  4. Place potatoes into mixing bowl
  5. Chop with MC on - 9 sec/speed 4
  6. Transfer into Varoma dish with carrots and set aside
  7. Rinse mixing bowl
  8. Place water into mixing bowl
  9. Insert simmering basket
  10. Place eggs into it
  11. Place Varoma dish with chopped vegetables into position
  12. Secure Varoma lid and steam 14 min/Varoma/speed 1
  13. Set Varoma aside, then remove simmering basket with aid of spatula and carefully transfer eggs into a bowl of cold water
  14. Place Varoma with vegetables back into position and stir vegetables with spatula to ensure even cooking
  15. Secure Varoma lid and cook 6 min/Varoma/speed 1, or until vegetables are soft
  16. Remove Varoma and set vegetables aside to cool (approx 30 min), placing Varoma lid under dish to avoid drips
  17. Clean and dry mixing bowl
  18. Place leek, cucumbers and apple into mixing bowl
  19. Chop with MC on - 4 sec/speed 5
  20. Transfer into a serving bowl and set aside
  21. Peel cooled eggs, then place peeled eggs into mixing bowl and chop with MC on - 3 sec/speed 4
  22. Transfer chopped egg into serving bowl with apple mixture, then add cooled potatoes and peas (optional)
  23. Make Dressing: Place all dressing ingredients except parsley into mixing bowl
  24. Blend with MC on - 3 sec/speed 5
  25. Pour dressing over salad in serving bowl and combine well using spatula
  26. Refrigerate salad until chilled (approx 30 minutes)
  27. Garnish with parsley and serve immediately
