Step preview

  1. Add your chicken to a chopping board and cut into 2 cm chunks
  2. Add the cut chicken to a microwave safe dish
  3. Cut the onion and red pepper into slices
  4. Add the sliced vegetables to the chicken
  5. Add smoked paprika, chipotle, garlic powder, ground cumin, salt, pepper and olive oil to the chicken and vegetables
  6. Mix well to get everything coated in the spices
  7. Place a microwave safe plate or lid on top of the dish and microwave for 8 mins on high
  8. When timer is up, carefully remove the chicken from the microwave and test the chicken to make sure it is cooked all the way through
  9. Add 25 g of cheese to one half of one of the tortillas
  10. Add 1/4 of the chicken mix on top of the cheese on one half of the tortilla
  11. Add another 25 g of cheese on top of the chicken
  12. Fold the tortilla in half
  13. Repeat with remaining tortillas
  14. Lightly oil the air fryer basket
  15. Lightly oil each side of the folded tortillas and add them to the air fryer basket
  16. Air fry for 8 mins
  17. Flip and airfry for a further 5 mins
  18. Serve with sour cream, avocado slices and lime wedges
