Step preview

  1. Set the Instant Pot to Sauté
  2. Melt the butter
  3. When the butter is beginning to foam, add the shallot and garlic
  4. Sauté until fragrant and lightly browned, 1 to 2 minutes
  5. Place the mussels in the pot
  6. Pour the broth and lemon juice over the mussels
  7. Close and lock the lid and turn the steam release handle to Sealing
  8. Press the Pressure Cook or Manual button and set the cook time to 3 minutes. When the time is up, perform quick release
  9. When fully released, open the lid
  10. Discard any mussels that did not open during cooking
  11. Carefully transfer the mussels to a serving bowl
  12. Pour any remaining liquid from the pot over the mussels and sprinkle with the parsley
  13. Serve and enjoy!
