These Red Velvet cookies are absolutely delicious, and so simple to make! The addition of buttermilk gives them the delicious 'tang' of a red velvet cupcake, with all the chewiness of a chocolate chip cookie.

- 115 g

- 150 g

- Caster sugar
- 50 g

- Vanilla extract
- 1 ½ teaspoons

- 1 ½ teaspoons

- Buttermilk
- 2 tablespoons

- White chocolate chips

Step preview
- Pre-heat oven - 179°C
- Add all purpose flour, cocoa powder, salt and baking powder to a clean large mixing bowl
- Mix until combined then set aside
- Add unsalted butter, light brown sugar and caster sugar to a clean medium bowl
- Beat until light and fluffy then set aside
- Add egg, vanilla extract, food coloring and buttermilk to a clean medium bowl
- Whisk until combined
- Transfer milk mixture to dough
- Beat until smooth
- Transfer dry ingredients to dough
- Add white chocolate chips to the dough
- Fold gently until well combined
- Refrigerate until firm - 20 min
- Line a clean baking sheet with parchment paper
- Divide dough into balls
- Transfer dough to baking sheet
- Flatten
- Bake - 12 min, 179°C
- Remove and Let Cool
- Serve
