Step preview

  1. Add active dried yeast, granulated sugar and water to a clean small bowl
  2. Add egg and buttermilk to the yeast mixture
  3. Add all purpose flour and sea salt to a clean medium bowl
  4. pour in the yeast mixture
  5. Mix until combined
  6. Add unsalted butter to the dough
  7. Mix until dough forms - medium speed
  8. Knead until elastic - 10 min, dough hook
  9. Prepare a clean large mixing bowl and cover
  10. Let rise until doubled - 1 hr
  11. Add a clean large cast iron skillet - medium heat
  12. Add red onion and fresh thyme to the large cast iron skillet
  13. Cook - 30 min, low heat
  14. Add nutmeg to the onions and mix
  15. Grease a clean round pan
  16. Punch down dough and turn out dough on lightly-floured surface
  17. rough the dough out into a rectangle
  18. Melt a clean small bowl - 30 sec, low heat
  19. Spread dough
  20. Season with salt & pepper
  21. Roll
  22. cut into slices
  23. Arrange dough in round pan
  24. Brush and cover
  25. Let rise until doubled - 30 min
  26. Pre-heat oven - 190°C
  27. Bake until golden brown - 30 min, 190°C
  28. Let cool
