Step preview
- Add the spices, salt and sugar to a small bowl and set aside
- Pat the pork shoulder dry and season both sides with salt and pepper
- Add olive oil to the inner pot
- Pre-heat inner pot on Sauté
- When the Instant Pot Pro Plus has finished pre-heating add the pork shoulder
- Brown the pork on each side for 4 mins
- Carefully remove the browned pork and place on a cutting board
- Add the juice of 2 limes to the inner pot to deglaze
- Add in the onion, garlic and stock cube, mix to break up the cube
- Add all the spices and sugar from the small bowl and mix for 30 seconds
- Add 600 ml of water to the inner pot and mix to combine
- Add the pork back in
- Turn over the pork to get a light coating of spices all over the pork
- Secure the lid onto the Instant Pot Pro Plus
- Pressure cook for 45 mins on Max, then allow for Natural Release 10 min, then Quick Release the remaining pressure
- While pork is cooking prep your taco toppings
- To make the pickled onions, add the sliced onions, salt and lime juice to a jar or tupperware box
- Add a lid on top and shake to coat the onion slices
- Leave the onions on the counter to pickle while you prep your mango salsa
- Add the mango to a medium bowl, with some lime juice and pinch of chipotle
- Mix to combine and set aside for when you are ready to serve
- Add the avocado to a bowl with the juice of 1 lime and season with salt
- Cover the avocado and set aside until ready to serve
- Place the sour cream, jalapenos and torn cilantro in three separate dishes
- Once the pressure has fully released carefully open the Instant Pot Pro Plus
- Remove the pork from the cooking liquid and place in a large bowl
- Reduce the cooking liquid in the inner pot on Sauté until the sauce is reduced by half
- Shred the pork with two forks
- When the sauce has reduced, heat a frying pan on high heat with some oil
- Add the shredded pork and 1/2 a cup of reduced liquid to the frying pan
- Leave the pork frying on high for 2-4 mins without moving the meat, until one side of the pork is browned
- Place the pork in a serving bowl in the middle of the table along with all the taco toppings and the warm tortillas
- Fill a warm tortilla with some pork and all the toppings eat, enjoy and repeat
