Step preview

  1. Cook your spaghetti until al dente
  2. Drain the pasta and reserve 1/2 cup of pasta water
  3. To a large microwave-safe dish add the olive oil, leeks and garlic and season with some salt
  4. Microwave on high for 1.5 mins
  5. Add the smoked salmon and Créme Fraiche to the leeks
  6. Stir in parmesan, pepper, cooked spaghetti and 1/2 cup of pasta water
  7. Mix well and microwave on medium for 2 mins
  8. Remove from the microwave and stir in the spinach until spinach has wilted
  9. Serve in serving bowls with some more shaved parmesan, and season with salt and pepper
