Step preview

  1. To a deep large microwave-safe bowl add the quinoa and water
  2. Microwave on Med-High (800w) for 3 mins
  3. Let the bowl rest for 3 mins in the microwave
  4. Microwave on Med-High (800w) for 3 mins
  5. Let rest for 3 mins
  6. Microwave again on Med-High (800w) for 3 mins
  7. Let rest for the final 3 mins
  8. Now the quinoa should have soaked up all the water, add the pesto and season with some salt and pepper
  9. Mix to combine
  10. To a mixing bowl add the kale, lime, salt and oil and using your hands massage the kale for 2 mins
  11. On a frying pan with some oil fry the eggs to your liking
  12. Serve a generous portion of pesto quinoa with a handful of kale, crumbled feta, optional pickled onions and seaon with some more salt and pepper if needed
