A quick healthy fish curry made in the microwave. We make ours with monkfish but this works with any fish of choice. Serve yours with rice or noodles for a delicious lunch or dinner

Step preview

  1. Mix together the oil, onions, ginger and salt to a microwave-safe dish
  2. Microwave on High for 2 mins
  3. Add the crushed garlic, salt and spices to the dish and mix well to form a paste
  4. Microwave on High for 30 seconds
  5. Add the chopped tomatoes, coconut milk and sugar to the dish and mix well to combine
  6. Microwave on High for 3 mins
  7. Mix well and microwave on High for a further 5 mins
  8. Add the monkfish chunks and mix into the hot sauce
  9. Microwave on Medium for 6 mins
  10. Remove the dish from the microwave and stir in the spinach to wilt it
  11. Serve the curry hot with rice or noodles
