Nuts, cranberries and oats taken to a whole new level with the addition of mini coconut macaroons. Serve with fresh fruit, yogurt, and honey - although it's perfectly sweet enough without the honey too. The macaroon's make a great snack too, just toss together with dried cranberries and enjoy!

Step preview

  1. Pre-heat oven - 180°C
  2. Add rolled oats, light brown sugar, honey, coconut oil and water to a clean large mixing bowl
  3. Mix together until combined
  4. Transfer oat mixture to baking sheet
  5. Bake until golden brown - 20 min, 180°C
  6. Add unsweetened shredded coconut, caster sugar, all purpose flour and egg white to a clean medium bowl
  7. Mix together until well combined
  8. Scoop dough onto baking sheet
  9. Bake until golden brown - 8 min, 180°C
  10. Retrieve oat mixture
  11. Add pecan pieces, walnuts and almonds to the oat mixture
  12. Bake - 8 min, 180°C
  13. Let cool
  14. Transfer cookies to oat mixture
  15. Mix in dried cranberries to the oat mixture
  16. Let cool completely
  17. Transfer oat mixture to jar
