Step preview

  1. Add granulated sugar and egg to a clean medium bowl
  2. Whisk heavily until foamy
  3. Add lemon and milk to the dough
  4. Whisk evenly until well combined
  5. Add white flour and baking powder to a clean medium bowl
  6. Whisk until well combined
  7. Transfer dry ingredients to the egg mixture
  8. Add unsalted butter and milk to the dough
  9. Whisk until well combined
  10. Let cool in fridge - 20 min
  11. Grease a clean madeleine pan
  12. Pre-heat oven - 250°C
  13. Transfer dough to madeleine pan into halves
  14. Bake - 10 min, 218°C
  15. Turn out onto cooling rack
