Step preview
- Pre-heat oven - 170°C
- Prepare a clean round pan
- Add gluten-free flour, baking powder, salt and xanthan gum to a clean medium bowl
- Whisk until combined then set aside
- Add coconut oil, granulated sugar, coconut milk, applesauce and vanilla extract to a clean large mixing bowl
- Stir until combined
- Add lime to the batter
- Transfer dry ingredients to batter
- Mix together until combined
- Add unsweetened shredded coconut to the batter
- Fold gently until combined
- Pour batter into round pan
- Bake until skewer tests clean - 40 min, 170°C
- Turn out onto cooling rack
- Add powdered sugar and lime juice to a clean medium bowl
- Whisk together until smooth
- Drizzle cake with glaze
