These moist, fragrantly spiced lamb meatballs are packed with flavour and simple to make. Don’t be afraid to use your hands to combine the lamb and spices well. The simple herby couscous takes minutes to make and cooling raita or tzatziki complete this tasty meal.

- 2 tablespoons

- Couscous
- 125 g

- Fresh parsley
- 1 tablespoon

- Mint leaves
- 1 tablespoon

- Feta cheese
- 50 g

Step preview
- Add ground lamb, garlic clove, ground cumin, ground coriander and salt & pepper to a clean medium bowl
- Mix well
- Shape firmly into balls
- Add olive oil to a clean frying pan
- Heat - medium heat
- Fry until browned and continue - 9 min, medium heat
- Boil water in a clean kettle
- Add couscous to a clean heatproof bowl
- Pour boiling water to cover the couscous
- Cover with plastic wrap - 5 min
- Uncover then fluff with a fork
- Add fresh parsley, mint leaves, feta cheese and fresh beet to a clean large serving bowl
- Serve with generous spoonfuls of raita or tzatziki
