Step preview

  1. Add harissa, lemon, couscous and water to a clean heatproof bowl
  2. Stir and cover
  3. Let rest then fluff with a fork - 10 min
  4. Heat a clean frying pan - medium heat
  5. Add eggplant, zucchini, yellow capsicum, red capsicum and onion to the frying pan
  6. Stir - 5 min, medium heat
  7. Add preserved lemon to the vegetables
  8. Transfer vegetables to couscous and mix
  9. Add canned chickpeas and coriander to the heatproof bowl
  10. Season with salt & pepper
  11. Serve with greek yogurt
