Step preview

  1. Add butternut pumpkin, parsnip, celeriac, ground cumin, ginger purée and vegetable stock to a clean large saucepan
  2. Boil - medium-high heat
  3. Cover until tender - 15 min, medium heat
  4. Blend with stick blender until smooth - medium speed
  5. Season with salt & pepper
  6. Ladle soup into 4 small bowls
  7. Add crème fraîche and fresh parsley to the small bowls
  8. Serve immediately
