We made these delicious scones with fresh sage, but thyme or rosemary would be great too! In any case, they're soft and cheesy and peppery. So good!

- Unsalted butter
- 110 g

- Cheddar cheese
- 150 g

- 5 g

- Buttermilk
- 15 g

Step preview
- Pre-heat oven - 200°C
- Grease a clean baking sheet
- Add egg and buttermilk to a clean small bowl
- Whisk together and set aside
- Add all purpose flour, baking powder, mustard powder, salt, black pepper and cayenne pepper to a clean large mixing bowl
- Whisk briefly
- Rub in unsalted butter until coarse crumbs form
- Add buttermilk-egg mixture
- Add cheddar cheese and fresh sage
- Mix briefly until dough forms
- Turn out on lightly-floured surface
- Flatten by hand until 1 cm thick
- Cut out 3 inch rounds with a cookie cutter
- Place rounds on baking sheet
- Add egg to a clean small bowl
- Mix in buttermilk to the egg
- Brush content of baking sheet with egg-buttermilk mixture
- Sprinkle with cheddar cheese
- Bake - 13 min, 200°C
- Serve
