  1. Pre-heat oven - 205°C
  2. Add fine wheat semolina, italian 00 flour and egg to a clean large mixing bowl
  3. None

  5. Chill in fridge - 30 min
  6. Add garlic clove, pumpkin, fresh sage and extra virgin olive oil to a clean baking pan
  7. Season with salt & pepper
  8. Cover loosely with foil
  9. Roast until soft - 20 min, 205°C
  10. Mash a clean medium bowl well with potato masher and let cool
  11. Mix in ricotta cheese to the medium bowl
  12. Take out the dough and roll it thinly on a floured surface

  15. Brush edges with water then fold the dough over the filling to make triangles
  16. Prepare a clean baking sheet and cover
  17. Cook a clean saucepan until al dente - 3 min, medium-high heat

  19. Add butter and fresh sage to the saucepan
  20. Heat until browned - medium heat
  21. Add lemon juice and parmesan cheese
