An easy Italian pear cake is the perfect pairing with a cup of cocoa for breakfast or snack time. This cake is made with sweet and creamy mascarpone cheese and fresh pears, baked until tender and juicy.

Step preview
- Pre-heat oven - 175°C
- Prepare a clean springform pan with parchment paper
- Peel and dice one pear into bite-size cubes
- Add pear, lemon juice and ground cardamom to a clean small bowl
- Mix until just combined then set aside
- Get a medium mixing bowl
- Add unsalted butter, mascarpone cheese, egg and vanilla extract to a clean medium bowl
- Whisk until smooth
- Get a small mixing bowl
- Add all purpose flour, baking powder, granulated sugar and salt to a clean small bowl
- Transfer dry ingredients to batter and mix
- Transfer pear mixture to batter and fold in
- Transfer batter to springform pan
- Peel and cut the second pear into ⅛” slices.
- Add pear to the springform pan
- Brush pears with butter and sprinkle sugar over the top
- Bake until skewer tests clean - 55 min, 175°C
- Transfer small bowl onto cooling rack
- Add powdered sugar and ground cinnamon to the small bowl
- Sprinkle with powdered sugar and cinnamon mixture
