This elevated french toast is composed of thick challah slices, generous schmears of peanut butter, tons of bananas, and a drizzle of honey. The bread is flavored with vanilla, nutmeg, and rum - feel free to leave out the rum if you're making it for kids!

Step preview

  1. Spread a clean plate evenly with peanut butter and bread slices
  2. Top with banana and honey
  3. stack the slices together to form two sandwiches
  4. Add egg, heavy cream, vanilla extract, nutmeg, dark rum and kosher salt to a clean medium glass bowl
  5. Add butter to a clean medium cast iron skillet
  6. Pre-heat - medium heat
  7. grease with butter or cooking spray
  8. soak all sides of the sandwiches in the egg mixture, then place on the griddle or skillet
  9. Cook each side until golden brown then set aside - 3 min, medium-high heat
  10. Remove to a cutting board and halve diagonally
  11. Add powdered sugar and maple syrup
