Step preview

  1. Pre-heat oven - 180°C
  2. Line a clean baking sheet with foil
  3. Add pumpkin and fresh beet to the baking sheet
  4. Drizzle with oil
  5. Season with salt & pepper
  6. Roast - 50 min, 180°C
  7. Prepare the Pulled Jackfruit mix and add it to the oven with the veggies in their last 25 minutes
  8. Add onion, garlic clove and ginger to the TM5 bowl
  9. Chop with MC in place - approx 3 sec, speed 6
  10. Scrape down sides of TM5 bowl
  11. Add coconut oil, canned jackfruit, chili flakes, paprika, salt, black pepper, tomato paste and apple cider vinegar to the TM5 bowl
  12. Cook - approx 4 min, 100°C, reverse speed 4
  13. Mix - approx 3 sec, reverse speed 4
  14. Transfer mixture to baking sheet
  15. Arrange red cabbage, cherry tomatoes, avocado, coriander, mint leaves, raw cashews, pumpkin seeds and hemp seeds in the clean large serving bowls
  16. Arrange roasted vegetables in 4 large serving bowls
  17. Garnish with lime
  18. Serve
