- Mixed berries

Step preview
- Pre-heat oven - 160°C
- Line a clean baking sheet with parchment paper
- Add brioche bread to the baking sheet
- Slice brioche loaf thickly, about 8cm thick
- Add egg yolk, vanilla bean paste and milk to the TM5 bowl
- Blend - approx 10 sec, speed 10
- Transfer content of TM5 bowl to plate
- Soak each slice of bread in the egg mixture turning once
- Add butter to a clean frying pan
- Heat - medium heat
- Cook the toast until golden on both sides
- Place onto prepared tray and keep in the oven until ready to serve. (No longer than 20 minutes.)
- Add egg white, cream of tartar and sea salt to the TM5 bowl
- Whisk - approx 4 min, 37°C, speed 3
- Then add golden caster sugar to the TM5 bowl slowly
- Whisk - approx 6 min, 50°C, speed 3
- Serve
- Garnish with strawberry jam, lemon curd and mixed berries
