The filling in these rolls is enhanced by fragrant cloves and honey, which marry beautifully to the brown sugar and cinnamon and result in a sticky glaze on the bottom. The cream cheese frosting soaks into the nooks and crannies of each spiral, adding tang and moisture. These take about four hours from start to finish. I would recommend waking up early and making them for a big Sunday brunch. The recipe can easily be halved for a smaller crowd, but keep the proofing times the same.

Step preview

  1. Add granulated sugar, egg, quick-rise yeast and plain flour to a clean stand mixer bowl
  2. Add milk and salted butter to a clean glass measuring cup
  3. Melt - 50°C
  4. Beat dough - 3 min, low speed
  5. Add plain flour to the dough
  6. Mix until combined - low speed
  7. Turn out dough onto lightly floured surface and knead for around 8 min
  8. Form into a bowl and transfer to the large greased mixing bowl
  9. Cover with plastic wrap
  10. Let rise until doubled - 2 hr
  11. Add light brown sugar, ground cinnamon and ground cloves to a clean small bowl
  12. Mix together then set aside
  13. Punch down large mixing bowl
  14. Roll out into a rectangle and spread with salted butter and top with cinnamon and cloves mixture
  15. Drizzle with honey
  16. Roll into a log and slice the dough into rounds
  17. Add baking spray to the clean square pans
  18. Cover with kitchen towel
  19. Let rise - 45 min
  20. Add salted butter, cream cheese, powdered sugar and vanilla extract to a clean stand mixer bowl
  21. Beat until smooth then set aside - medium speed
  22. Pre-heat oven - 190°C
  23. Bake rolls until golden brown - 15 min, 190°C
  24. Let cool - 10 min
  25. Spread the frosting over the warm rolls
  26. Serve immediately
